Our Brown Butter Garlic Mashed Potatoes
Potatoes, potatoes, potatoes. From breakfast to dinner, potatoes are a welcome side at our table. If it was up to me, I would have potatoes with every meal. Minda and our son differ from me on this, so I have decided I must try and come up with new ideas on how I serve them potatoes. I have taken suggestions from the whole family and came to the conclusion that we all love potatoes but have had a hard time deciding how to spruce them up. Minda and I started simple and worked to improve our mashed potatoes and find that perfect balance of flavor and texture. That’s how we came up with our Brown Butter Garlic Mashed Potatoes.

Ingredients, Substitutions, and Additions
Butter – We use unsalted butter to make our Brown Butter but when we only have salted butter on hand, we’ll use it. Just remember that there will be extra salt that you need to account for in your potatoes and adjust according to your preferred taste.
Potatoes – For this round of our Brown Butter Garlic Mashed Potatoes we used a red skinned potato. A red skinned potato makes a perfect rustic mashed potato and are a perfect option when you want to leave the skin on. When using red skinned potatoes we like to leave the skin on about half of our potatoes.
Potato Tips:
- If a creamer mashed potato is desired use a russet potato for a velvety finish.
- When boiling your potatoes, the size in which you cut them will determine that cooking time. If they are cut smaller they will cook faster, while a larger cut will take longer.
Garlic – We like to sauté our garlic before adding it to our Brown Butter Garlic Mashed Potatoes. This allows us to get an amazing caramelized flavor from the garlic.
Milk – I prefer whole milk in my Brown Butter Garlic Mashed Potatoes but any milk on hand will do. If the milk has a high fat content the creamer the mashed potatoes will be.
Herbs – Top your Brown Butter Garlic Mashed Potatoes with some fresh herbs. We rotate between parsley, chives, and green onions. This really depends on what looks the best at the grocery store.
Tips When Making Brown Butter
- When making Brown Butter try and use a light colored pan. This will help you see the butter brown while it is cooking.
- Make sure to continually stir your butter while cooking it. This will help keep it from burning.
- Have a heat proof bowl near to pour your brown butter. You will want to remove it from the hot pan and pour it into the bowl. It can burn in a matter of seconds.

Ingredients for Brown Butter Garlic Mashed Potatoes
- 6 Large Red Skinned Potatoes
- 1 Stick Unsalted Butter
- 1 tbs Oil
- 6 Garlic Cloves
- 1 cup Milk, warm
- 2 tbs Green Onions, sliced
- 1 tsp Salt
- 1 tsp Pepper
Directions
Brown Butter
Cut the stick of unsalted butter into 8 equal size pieces.
Place into a small light-colored pan and cook over medium heat for 5 to 8 minutes. Continually stir to prevent burning.
When the butter turns brown in color and has a nutty aroma remove from heat and place in a heat proof bowl.
Sauté Garlic
Peel and mince garlic.
Add oil to a small pan over medium/high heat. Once the oil begins to ripple add the garlic and sauté for 2 to 3 minutes or until the begin to caramelize. Remove from heat.
Prep Potatoes and Assemble
Wash and peel potatoes.
Cut potatoes into 1-inch cubes and place in a medium/large pot. Fill pot with cold water to 1-inch above potatoes.
Bring potatoes to a boil of a medium/high heat and then cook for 20 to 25 minutes or until they are fork tender.
Drain and mash using a potato masher.
Add warmed milk, brown butter, sautéed garlic, salt and pepper then mix until fully incorporated.
Top with sliced green onions and enjoy.
