Our Loaded Nachos with Fajita Veggies​

One of our favorite dinner nights is Nacho Night where we make the family our Loaded Nachos with Fajita Veggies. It’s quick, easy, and very cheesy. The key to this meal is layering. You can’t just throw all your chips on the plate and your toppings on the top. No, no, no. Just because they are called toppings does not mean they are not meant to grace the inside of your nacho. It would just be weird if we referred to them as innards, so we will stick with calling them toppings.

These nachos have lots of toppings but our favorite one to add are fajita veggies. It gives them a little bit of sweetness and flavor that sends our nachos to the next level.

Ingredients, Substitutions, and Additions

Tortilla Chips – Any tortilla chip will do. Our absolute favorite is Juanita’s, or Juantonio’s depending on where you live. They are crispy, have a great flavor, and maintain their freshness if you can’t finish the bag in one sitting.

Protein – We use ground beef in our nachos because it’s quick and easy to fry up. However, these would be perfect with some shredded chicken or pork. Check out our shredded chicken from our Cheesy Chicken Enchiladas or the pork from our Crock-Pot Chili Verde Tacos.

Cheese – Oh, cheese! One must have cheese on their Nachos. We love Salsa Con Queso but any other type of nacho cheese is fine. We also use a what we call a topping cheese which is normally a mild cheddar. A cheddar jack would work great a topping cheese.

Crazy Toppings – Nachos are an amazing dish that can be transformed into a masterpiece for an individual to enjoy. Toppings are what help make Nachos your own . Go crazy here. Anything you enjoy can go on your Nachos. From salsa to cream cheese or breakfast sausage and an over easy egg. Think outside the box and enjoy.

Loaded Nachos with Fajita Veggies

Ingredients for Loaded Nachos with Fajita Veggies​

Ground Beef

  • 1 lb Ground Beef
  • 2 tbs Oil
  • 1 Medium Onion, diced

Nacho Toppings

  • 1 Medium Onion
  • 2 Bell Peppers, sliced
  • 1 Jar Salsa Con Queso Dip, warmed
  • 1 Tomato, diced
  • 1 small Jar Pickled Jalapeños
  • 1 small Can Sliced Olives
  • 1/2 cup Green Onions, diced
  • 1 cup Sour Cream
  • 1 Bag Tortilla Chips
  • 8 oz Shredded Cheese

Directions

Cook Nacho Meat

Bring a large pan to medium heat and add oil to the hot pan. Sauté onion in oil for 3-5 minutes or until onions start to become translucent. Stir frequently.

Transfer onions to a small bowl and add Ground Beef to the hot pan. Using the edge of a spatula chop up the ground beef as it cooks into small pieces. Cook for 10 minutes. Once the Ground Beef is brown and fully cooked, remove any excess grease from the beef and return onions back to the pan. Stir and cook for an additional 5 minutes.

Sprinkle taco seasoning onto the Ground Beef and follow instructions from the packet to add water and continue cooking. Turn off heat and set aside.

Sauté Fajita Veggies

Cut second Onion in half, dice one half for topping and set aside. Slice the other half of the Onion and add to the sliced Bell Peppers.

Bring a large pan to medium heat and add oil to the hot pan. Sauté Sliced Bell Peppers and Sliced Onion for 10 minutes, stirring frequently. Turn off the heat and set aside.

Assemble Nachos

Set out four plates and spread a thin base layer of Tortilla Chips on each one. Spoon beef, Salsa Con Queso, and Fajita Veggies on top of the Tortilla Chips. Be sure to save about half of the Beef, Salsa Con Queso and Fajita Veggies for the top layer. Add any additional toppings you want on the inner layer of nachos.

Place another layer of Tortilla Chips on each plate. Add remaining toppings and finish with a dollop of about 1/4 cup of Sour Cream in the center. Serve and Enjoy!
